Beef Tacos with Pineapple Salsa and Crema

It's taco time! Here we are to add a little bit of the tropics to your tacos this week. A little pineapple goes a long way in this recipe. It adds a nice sweet kick to dinner that's not too sweet but adds a nice flavor. When it comes to chicken you have a lot of options! One easy thing to do with chicken is to make a nice crunchy and cheesy crust on top - we're going to show you how right now. Cheese and Pesto Crusted Chicken with Potato Cubes and Salad Total Time: 40-50 mintues Generously serves a family of 4 Ingredients: 12 small Yukon Gold Potatoes 1 cup Panko Bread Crumbs 1 cup Shredded Mozzarella Cheese 4 Chicken Breasts 4 Tbsp Pesto 1 Lemon 1 - 5oz bag of Spring Salad Mix Olive Oil Directions Wash and dry the potatoes. We're feeling like it's time for tacos. We haven't posted any recipes for tacos yet, so it's obviously time. We decided to go with something a little less traditional by making tacos with pulled pork instead of ground beef. We also had to have a good side so beans were a perfect option. Let's dive in! Pulled Pork Tacos with Black Bean Salsa Total Time: 30 minutes Generously serves a family of 4 Ingredients: 2 Limes 1 Red Onion 1 Jalapeno 2 Roma Tomatoes 3 Tbsp Southwest Spice Blend 1 1/2 lbs of Fully Cooked Pulled Pork 2- 15oz cans of Black Beans 12 Small Flour Tortillas 4 oz of Sour Cream (about 8 tbsp) 1 cup Shredded Cheddar Cheese Olive Oil Directions Wash and dry all of the produce.
